Squash Muffins

Our Zucchini’s did not make it this year but we were given another type of squash that is green on the outside and orange on the inside and I did not know what to do with it.  We have so many it literally took over the garden so I had to figure out something.  The kids loved these muffins and they got their veggies!!

Squash Muffins

2 Cups Rice & Chia flour mix

1/2 Cup Coconut flour

1 T Baking Powder

1 1/2 t Cinnamon

1/4 t Nutmeg

1 t Salt

3 Flax Eggs

1 Cup Sugar

2 1/2 Cups Squash & Milk (Blend Squash with about 1 Cup Rice Milk)

1/2 Cup Olive Oil

1 t Vanilla

 

Mix and Scoop into muffin tins.  Bake 350º F about 20 min.
