Strawberry Shortcake

3/4 Cup Coconut Oil
1/2 Cup Sugar
1/2 t vanilla

Cream together.

Add:

1 t salt
1 T baking powder
1/8 t baking soda
3/4 Cup Rice Flour
3/4 Cup Sweet Sorghum flour
1/2 Cup Potato Starch
1/4 Cup Coconut flour
2 T whole Chia seed
1 Cup Coconut milk

Mix well. Scoop on to cookie sheet.
Bake 400° F for 8-10 min.

When cooled poor on the strawberries and coolwhip! Yumm.
